DOSAS are SRI LANKAN pancakes made from rice and lentils, with the batter naturally fermenting – making them lactose and gluten-free. This offers a fantastic culinary experience that is 100% free of lactose and gluten. The dosa has its roots in the Indian Tamil Nadu region, which connects India to Sri Lanka. Chef Uday originally hails from Sri Lanka, where the inspiration for Paper Dosa began with the classic story of a mother with magical skills in the kitchen. Inspired by her culinary expertise, Uday is determined to bring Sri Lanka’s traditions to Danish palates.

THE SRI LANKAN CUISINE IS TRULY UNIQUE

What sets Sri Lankan cuisine apart from Indian cuisine – and gives it its unique touch – includes the choice of spices and the use of coconut milk instead of yogurt in curries. Coconut is a prominent ingredient in Sri Lankan cuisine and is widely used in many dishes as a base for curry, adding a unique flavor and texture. For instance, “gunpowder” is a common ingredient in Sri Lankan cuisine but not often used in Indian cuisine. It’s often these small changes that make a big difference.

CURRIES

Specifically, SRI LANKAN curries will be the filling for the approximately 30-centimeter wide dosa pancakes. Paper Dosa offers versions with meat as well as vegetarian/vegan options. Dosa, curry, chutneys – if it’s on the menu – it’s made from scratch. Choose between masala dosa with potatoes, vegetable dosa with cauliflower, chicken dosa with marinated chicken breast, beef dosa with marinated beef, and pork dosa.

CHUTNEYS & SIDES

Paper Dosa’s chutneys are also homemade and coconut milk-based. They offer chili and mango chutneys. These homemade chutneys are practically a compliment (and a requirement) for Paper Dosa’s sides, which include Corn Ribs with salt and lemon pepper.
