Paper Dosa

The dosa is made from rice and lentils, where the batter naturally ferments, and therefore, it does not contain lactose or gluten. In other words, it is 100% lactose-free and gluten-free. The dosa has its roots in the Indian Tamil Nadu region, which connects India to Sri Lanka. The chef, Uday, is originally from Sri Lanka – where he grew up and got the inspiration for PAPER DOSA

THE SRI LANKAN CUISINE IS UNIQUE
What sets Sri Lankan cuisine apart from Indian cuisine is the spices and the choice of coconut milk instead of yogurt in curries. Small changes that make a big difference.

CURRIES
Curries are the filling in the approximately 30-centimeter wide dosa pancakes. There are versions with meat as well as options for vegetarians/vegans. Dosa, curry, salads, chutneys – if it’s on the menu, it’s made from scratch. Choose between potato masala, a vegetable kurma, chicken curry, marinated beef, or a version with shrimp.

CHUTNEYS
Paper Dosa’s chutneys are something special as they are homemade and based on coconut milk.
